Filter Brewing
This coffee showcases Brazil Mogiana's nutty tones and Ethiopian Yirgacheffe's citrus brightness notes.
Recommended brewing method: flat-based brewers with custom paper filters for optimal extraction.
Grind settings: For filter coffee, the grind size plays a crucial role in balancing extraction and flavour. Here's a guide tailored for the V60 and the Moccamaster:
V60 Grind Size
Grind Texture: Medium-fine, resembling table salt.
Reason: The V60 relies on manual pouring, which allows control over water flow. A medium-fine grind ensures a balanced extraction, with water passing through the coffee bed at an optimal rate.
Tips: Adjust grind size if your brew tastes off—go finer for weak or sour coffee, coarser for over-extracted or bitter notes.
Moccamaster Grind Size
Grind Texture: Medium, resembling beach sand.
Reason: The Moccamaster is an automatic drip brewer with a fixed water flow rate. A medium grind prevents clogging the filter while ensuring even extraction over the brewing cycle.
Tips: If your coffee tastes too strong or bitter, try a slightly coarser grind. If it’s too weak, go finer.
Espresso Brewing
Tailored for espresso lovers, using Modbar AV for precise control.
Espresso grind: Fine adjustment required to highlight the blend's balanced sweetness and vibrant acidity.
Cupping
When cupping we Focused on exploring the full sensory profile of Brazil Mogiana and Ethiopian Yirgacheffe.
Cupping enhances the distinct attributes—Brazilian chocolate notes paired with Ethiopian floral complexity. We think this gives it a very well-rounded taste whether black of mixed with milk.
